This is Parrot fish(AKABUDAI) poached with soy sauce and sugar.
Knob snout parrot fish(AOBUDAI) has poison in it's liver, but this
doesn't have. The skin of head area was very gelatinous and it
seemed have a lot of collagen.
We were able to eat shrimp shell and all, and it was so delicious.
